Chef and restauranteur Tom Colicchio’s new culinary undertaking in The Beekman Hotel now has a name that speaks to the location’s history. The name, Fowler and Wells, is inspired by two phrenologists that used to work in the building.

The restaurant’s entire identity is being built with the historic location in mind; Colicchio even hired Martin Brudnizki, who designed the prospective hotel, to design his restaurant. Fowler and Wells’ fare will be inspired by popular turn of the century dishes.

The restaurant will also have an impressive rotating cocktail menu, a lounge with a more casual air/ cuisine and primary dining space offering more upscale eats. The space will be a new addition to immense Colicchio “Craft” empire, which includes eateries in New York, LA, Las Vegas and South Beach. Keith McNally, known for his fashionable french spot Balthazar in SoHo, will also open a french-themed restaurant in The Beekman.

Fowler and Wells is projected to open in May or June.
